Makes 2 servings


  • 10 ripe honey tomatoes, washed

  • 2 large carrots, washed and peeled

  • 2 passion fruits

  • 5 leaves fresh basil

  • 1 burrata

For the dressing

  • 2 tablespoons extra virgin olive oil

  • 1 tablespoons white wine vinegar

  • 1 teaspoon agave syrup

  • 5 leaves fresh basil

  • sea salt and freshly ground pepper to taste


  1. Peel the carrots in large stripes and put in a bowl.

  2. Cut the passion fruits in halves and pour out the liquid, pass the juice through a fine sieve into bowl. Pour the passion fruit juice over the carrots to marinate for max. 10 minutes.

  3. Combine oil, vinegar, agave syrup, basil leaves (cut into small pieces), sea salt and pepper to a smooth dressing and put to the side.

  4. Cut the tomatoes in halves and put to the side.

  5. Carefully take out the carrot stripes and form little “roses” using tweezers and arrange randomly on the plate. Pour the remaining juice into the dressing and stir.

  6. Arrange the tomatoes on a plate with the carrot roses.

  7. Then cut the burrata carefully into small pieces and arrange also on the plate.

  8. Gently pour the dressing over the salad and decorate with some small pieces of the remaining basil leaves.

  9. Enjoy with a cold glass of white wine :)!
