Using Za'tar (middle Eastern spice mix) give this salad a special flavour.

Makes 2 - 4 servings

Ingredients

  • 2 romaine hearts, washed

  • 50g olives (mixed and deseeded), cut into small pieces

  • 1 red bell pepper, washed, deseeded), cut into small pieces

  • 4 ripe tomatoes, cleaned and cut into cubes

  • 1 small cucumber, peeled and cut into cubes

  • 2 tablespoons of fresh herbs (parsley, chives, tarragon)

Dressing

  • 2 tablespoon extra virgin olive oil

  • 1 tablespoon white balsam vinegar

  • 2 teaspoons Za'tar (middle Eastern spice mix)

  • sea salt and pepper to taste

Method

  1. Combine oil, vinegar, Za'tar, sea salt and pepper to a smooth dressing and put to the side.

  2. On a large plate arrange romaine hearts leaves and sprinkle a bit of the dressing on them.

  3. In a bowl mix cut tomato, cucumber and olives with the herbs.

  4. Mix well with the dressing.

  5. Using a tablespoon and put the salad mix in the leaves.

  6. Serve as starter with some freshly baked bread.
