This salad shows that apricots can be combined with sweet and sour flavours.
Makes 4 servings
Ingredients
- 600 g green beans (washed and ends cut off) 
- 100 g champignons 
- 4 red onions with green 
- 100 ml apple vinegar 
- 2 tablespoons honey 
- 4 - 6 apricots (washed and stones taken off) 
- 100 ml olive oil 
- salt and pepper 
Method
- Clean the champignons and cut them into slices. Cut onions into quarters. 
- In a pan heat up the olive oil and fry the champignons on a medium heat for 2-3 minutes. 
- Then add the onions, honey and vinegar. Cook until the onions are still al dente. 
- Take the pan off the heat and add the apricots and marinate for a couple of minutes. 
- Plate on four plates and enjoy.
