This light starter is very easy to prepare and refreshing.

Makes 35 bites

Ingredients

  • 150 grams quark or crème fraîche
  • 8 sundried tomatoes
  • 1 small bunch fresh basil (chopped)
  • 1 tablespoon Italian dried herbs
  • 2 medium sized cucumbers
  • sea salt and freshly ground pepper to taste

Method

  1. Chop 6 tomatoes and mix with the quark or crème fraîche.
  2. Add the chopped basil, herbs, salt and pepper and blend to a soft paste.
  3. Wash and peel the cucumber, half and deseed with a spoon.
  4. Cut the cucumber in 3 cm long pieces and fill with the mixture and put them on a large plate.
  5. Cut 2 sundried tomatoes in fine slices and decorate the cucumber slices.
