This salmon burgers are great for a dinner party or a light lunch.

Makes 8-10 patties

Ingredients

  • 400 g organic salmon filets (skin cut off)
  • 3 sping onions
  • 50g bread crumbs
  • 1 egg
  • sea salt and freshly ground pepper to taste
  • 2-3 tablespoons good quality frying oil
  • Handful of salad leaves

Method

  1. Cut the salmon filets into 1 cm small pieces-
  2. Wash the spings onion and cut into thin rings and add to the fish-
  3. Mix the egg and the breadcrumbs into the fish mixture and season with salt and pepper to taste.
  4. Use wet hands and form approx. 10 patties and place them on a plate.
  5. Leave the patties 10 minutes in the fridge.
  6. Using a large frying pan and fry the patties gently in 2-3 tablespoons of oil.
  7. Serve warm or cold with some sliced lemon or

Twists

Serve between burger buns or/and on some salad leaves, thinly chopped stripy beetroot. And serve with some fresh wild garlic dip (Method: blend 4 leaves of wild garlic with 4 tablespoons of greek yogurt using a blender. Add sea salt and freshly ground pepper to taste). Garnish with some fresh dill.
