This refreshing salad is perfect for a hot summers day.

Makes 3-4 servings

Ingredients

  • 150 grams feta cheese
  • 750 grams water melon, cooled
  • 1 small bunch fresh mint (chopped)
  • 2 tablespoons extra olive oil
  • 1 tablespoon whitewine vinegar (alternativly use lemon or lime juice)
  • sea salt and freshly ground pepper to taste


Method

  1. Cut the feta cheese into 1-2 cm sized cubes.
  2. Remove the rind and the pips from the watermelon and
    cut in to 2 cm sized cubes.
  3. In a large bowl mix olive oil, vinegar, salt and pepper to taste.
  4. Add watermelon, feta and mint and mix well.
