This cucumber variations are great for a starter.

Makes 2 - 4 servings

Ingredients

  • 1 cucumber, peeled and cut into small cubes
  • 1 cucumber, peeled and cut into thin slices
  • 250 g natural yoghurt (I used greek yoghurt)
  • handful of fresh herbs (chives, dill and flat parsley)
  • 1 tablespoon of Za'tar
  • sea salt and pepper to taste

Dressing

  • 2 tablespoon cold-pressed sunflower olive oil
  • 1 tablespoon white balsam vinegar
  • 1 teaspoon lime juice
  • 1 tablespoon hot chili sauce
  • 1 red chili pepper, deseeded and finely chopped
  • 1 teaspoon agave nectar
  • chili flakes to taste
  • sea salt and pepper to taste

Method

  1. Combine oil, vinegar, lime juice, chili sauce, chopped chili, agave nectar, sea salt and pepper to a smooth dressing and put to the side.
  2. Mix diced cucumber, natural yoghurt herbs, spices in a bowl.
  3. Mix cucumber slices with the spicy dressing and mix well.
  4. On a large plate put cucumber yoghurt mix in the centre and arrange spicy cucumber salas around.
  5. Sprinkle fresh herbs, chili flakes, dill and a slash of olive oil all over to taste.
