Enjoy this fruit cake all year round.

Makes approx. 20 pieces

Ingredients

For the cake mixture:

  • 250g butter (room temperature)
  • 150g sugar
  • 4 eggs
  • 300g flour
  • 2 teaspoons of baking powder
  • pinch of salt

For the streusel:

  • 225g flour
  • 115g cold butter
  • 90g sugar
  • pinch of salt
  • 100g almonds

For the fruit filling:

  • 400g apples (peeled, deseeded and cut into thin slices)

Method

  1. Beat the eggs with an electric mixer by adding the sugar and the salt.
  2. Add the butter until you have a soft mixture. Then add the flour and the baking powder. Mix all well.
  3. Preheat the oven to 200C/180C fan/gas 6.
  4. Spread the cake mixture onto a greased baking tray.
  5. Place the apples slices evenly - one next to the other on the cake mixture.
  6. For the crumble: place the flour and sugar in a large bowl and mix well. Taking a few cubes of butter at a time rub into the flour mixture until you have the crumble.
  7. Place the crumble and the almonds evenly over the fruits.
  8. Bake in the hot oven for 45 min until golden brown.
  9. After baking leave the cake to cool down. Cut the cake into slices.
  10. Enjoy it with whipped cream or on its own with a nice cup of coffee or tea


Twists: this recipe is very versatile - you can use canned cherries, pears, plums or peaches instead of apples.
